These healthy muffins are gluten-free and sneak a little veggie into your kids breakfast!
Preheat your oven to 400 degrees and line muffin tins with liners. You can also just spray with a non-stick spray if you don’t want to use liners.
Put all of your ingredients into a blender or food processor and blend until it is smooth.
Divide the batter between your muffin cups and bake for 15-20 minutes. A toothpick will come out clean when done.
